Ingredients:
-> 6 eggs
-> 150 g of almond flour
-> 50 g of coconut flour
-> 130g of natural yoghurt
-> 20g of pudding
-> 40g of brown sugar
-> 50g of melted butter
-> 1 teaspoon of baking powder
-> a handful of your favorite nuts/seeds
-> blueberries/raspberries (according to taste)
-> 2-3 tablespoons of pre-cut Cacao
Preparation:
0. Turn on the oven at 180.
1. Melt the butter! (It always annoys me when it’s omitted from the recipe… a couple of times I forgot to add it…)
2. Beat egg whites with salt.
3. Add egg yolks, butter and yogurt. Mix.
4. Add the rest: flour, baking powder, pudding, sugar. Mix.
5. Pour the fruits&nuts (half of the fruits on top!). Mix.
6. Pour into a cake tin lined with paper. Bake for 30 minutes (I have convection + up/down) and leave it in the oven for a while.
The cake is wonderfully moist and is perfect for a movie evening or for girl nights.
P.S. You can add gingerbread spice. It will be more festive 🙂
